Churros with Dark Chocolate Sauce

   Bring water and butter to a boil in a saucepan. Add flour all at once and stir vigorously until a smooth dough forms. Let cool for 5 minutes, then beat in the egg until glossy.

   Transfer the dough to a piping bag fitted with a large star nozzle. Heat oil in a deep pan to 180°C (350°F).

   Pipe 10 cm strips of dough directly into the hot oil (snip with scissors). Fry 3–4 minutes, turning once, until deep golden. Drain on paper towels.

   Mix caster sugar and cinnamon on a plate. Roll the hot churros through the mixture until coated all over.

   For the sauce: heat cream until just simmering, pour over chopped dark chocolate, wait 1 minute, then stir until smooth. Serve alongside the churros.
